Is food and wine an integral part of your favorite travel memories?
Croatia and the region offer many flavorful and intriguing cuisines and grape varietals you’ve never heard of. Allow me to expand your education with some information now, then I’ll tempt you with a specialized journey we’re constructing for later this year.
Throughout history, numerous empires have laid claim to the region, and each left culinary influences. Roman, Venetian, Ottoman, Hungarian techniques and ingredients transformed into the grilled meats and fish, risottos and pastas, goulashes and stews that have become uniquely Croatian, Slovenian, and Bosnian dishes. I’ll sprinkle a few names of favorite foods into your vocabulary: Čevapčići, ispod peka, kajmak, paški sir, mlinci, sarma, palačinka, burek, pašticada, ajvar, struklji, crni rižoto, čorba, and blitva. You don’t know what those are yet, but you will be pleased to meet “them” and we’re happy to help you with pronunciation!
Rich soils, plentiful water and ideal climate ensure bountiful fresh local produce of vegetables, fruits, and grains. Fish and shellfish straight from the sea and rivers, humanely husbanded organic animals, all prepared with locally produced olive oils, vinegars, honey and herbs, and often served with world famous artisanal cheeses, locally sourced truffles and fantastic mushrooms provide endless gustatory pleasure.
The wine scene is both modern and ancient, with cutting edge new wine crafting styles and ultimate traditional methods, which yield delicious results. We’re pretty sure you have not heard of all of these varietals. Grk, plavac mali, teran, malvazija, graševina, Vrt, pošip, rukatac, refošk just to name a few. But we’re pretty sure you’ll enjoy getting to know them.
